In addition to growing their own sweet potatoes for their distilled spirits like gin and sweet potato liqueur, Corbin also grows rye as a rotation/cover crop, and so naturally they began distilling their own rye whiskey as well. They grow, harvest, ferment and distill. Farm to glass, and expertly made, this is a solid line of California made spirits.
Low Gap 4 Year Wheat Whiskey Finished in a Sauternes Wine Barrel.
The American Craft Whiskey Distillery has been distilling whiskey since 2010 and is a collaboration between distiller Crispin Cain (behind Germain-Robin absinthe and Crispin’s Rose liqueur) and Ansley Coale of Craft Distillers. They double distill on an antique 16 hectoliter (420 gallon) cognac still, producing wheat, rye, bourbon and blended whiskies. Our bottle uses a Bavarian wheat distillate that was aged four years in bourbon barrels and finished in a Premier Cru Sauternes wine barrel. Sauternes is a French wine from the Bordeaux region that uses Sémillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea. It is a concentrated, sweet wine whose approachable nature is elevated by complex flavors of honeysuckle, almond, fig, flowers, and brioche.
Husband and wife team Timo and Ashby have been making some amazing spirits in Sonoma these last few years. Their growing line of spirits now includes and a rye, a wheat whiskey, and a barrel aged sloe gin. We’ll be showcasing their vodka, gin, and sloe gin. What do these three things have in common? They’re all perfect with a bit of fresh lime and a healthy splash of tonic!
